Recipe Ingredients

1 ripe mango, peeled, cut into 8 strips
2 tsp Compliments Pure Olive Oil 10 mL
1/2 tsp cracked black pepper 2 mL
1 tbsp Compliments Organic 100% Pure Wildflower Honey 15 mL
2 tsp lime juice 10 mL
1 cup ricotta cheese 250 mL
4 Compliments French Style Crêpes
3/4 cup Sweet & Tangy Grilled Fruit Salsa 175 mL
1/4 cup Compliments Sensations Raspberry Lime with Vodka Drizzler 60 mL
 

Recipe Directions

  1. Preheat barbecue to medium-high.
  2. Gently toss mango in olive oil and pepper. Place in a grill basket. Grill until marked and slightly softened, about 3 minutes, turning once.
  3. Combine mango with half the honey and half the lime juice.
  4. Stir remaining honey and lime juice into ricotta until smooth.
  5. Place mango slices in centre of each crepe. Spoon ricotta mixture over each and roll up. Spoon 3 tbsp (45 mL) fruit salsa over each crepe and garnish with drizzler.
