Grilled Pita Crostini with Tzatziki Recipe
Recipe Ingredients
| 3 tbsp | Compliments Pure Olive Oil | 45 mL |
| 1/2 tsp | each ground cumin and pepper | 2 mL |
| 1 | clove garlic, minced | |
| 4 | pocketless pitas | |
| 1 | tomato, seeded and finely chopped | |
| 1/4 tsp | finely grated lemon zest | 1 mL |
| Salt | ||
| 1/4 cup | Compliments Tzatziki Yogourt & Cucumber Dip | 60 mL |
Recipe Directions
- Preheat barbecue to medium heat.
- Whisk oil with cumin, pepper and garlic; brush mixture over both sides of pitas. Grill pitas until well toasted, about 1 to 2 minutes per side. Cut pitas into wedges and arrange on individual plates; season to taste with salt.
- Stir any remaining seasoned oil into tomatoes, stir in lemon zest. Mound tomato mixture in the middle of each plate. Serve with tzatziki on the side.
