Recipe Ingredients

3 tbsp Compliments Pure Olive Oil 45 mL
1/2 tsp each ground cumin and pepper 2 mL
1 clove garlic, minced
4 pocketless pitas
1 tomato, seeded and finely chopped
1/4 tsp finely grated lemon zest 1 mL
Salt
1/4 cup Compliments Tzatziki Yogourt & Cucumber Dip 60 mL
 

Recipe Directions

  1. Preheat barbecue to medium heat.
  2. Whisk oil with cumin, pepper and garlic; brush mixture over both sides of pitas. Grill pitas until well toasted, about 1 to 2 minutes per side. Cut pitas into wedges and arrange on individual plates; season to taste with salt.
  3. Stir any remaining seasoned oil into tomatoes, stir in lemon zest. Mound tomato mixture in the middle of each plate. Serve with tzatziki on the side.
