Recipe Ingredients

1 pkg. Compliments Organic Baby-cut Carrots 454 g
1/4 cup Compliments Balance Raspberry Vinaigrette (approx) 60 mL
1 tbsp smoky barbecue sauce 15 mL
2 tsp chili powder 10 mL
1/2 tsp Compliments Louisiana Hot Sauce 2 mL
Salt
Thinly sliced green onion
 

Recipe Directions

  1. Preheat barbecue to medium-high.
  2. Microwave carrots with ΒΌ cup (60 mL) water, covered, at High, stirring occasionally, until tender-crisp, about 5 minutes. Drain well. Toss carrots with vinaigrette, barbecue sauce, chili powder and hot sauce until well coated.
  3. Spoon carrot mixture (including juices) into centre of a large sheet of heavy-duty foil. Fold and crimp foil to make a tight packet of even thickness. Cook carrots until browned but not scorched, about 20 minutes, turning once. Season with salt and extra vinaigrette to taste. Garnish with green onion.
