Veggie Pita Panini Recipe
Recipe Ingredients
| 2 | pocketless whole-wheat pitas | |
| 1/3 cup | Compliments Balance Shredded Part Skim Mozzarella Cheese | 75 mL |
| 1 | tomato, sliced | |
| Cracked black pepper, to taste | ||
| 1/4 cup | Compliments Organic Hummus Chick Pea Spread | 60 mL |
| 1/4 cup | sliced red onion rings | 60 mL |
| 1/2 | yellow pepper, thinly sliced | |
| 8 | large arugula leaves, stems removed |
Recipe Directions
- Preheat Compliments Culinaire Panini Grill to medium-high. Cut pitas in half to make 4 half moons. Sprinkle half of the cheese over 2 pieces. Top each with an equal amount of tomato slices, black pepper, hummus, onions, pepper strips, arugula and remaining cheese.
- Top sandwiches with remaining pita halves. Place sandwiches on panini grill. Close lid and cook for 5 minutes or until cheese is melted and bread is well toasted.
