Recipe Ingredients

2 pocketless whole-wheat pitas
1/3 cup Compliments Balance Shredded Part Skim Mozzarella Cheese 75 mL
1 tomato, sliced
Cracked black pepper, to taste
1/4 cup Compliments Organic Hummus Chick Pea Spread 60 mL
1/4 cup sliced red onion rings 60 mL
1/2 yellow pepper, thinly sliced
8 large arugula leaves, stems removed
 

Recipe Directions

  1. Preheat Compliments Culinaire Panini Grill to medium-high. Cut pitas in half to make 4 half moons. Sprinkle half of the cheese over 2 pieces. Top each with an equal amount of tomato slices, black pepper, hummus, onions, pepper strips, arugula and remaining cheese.
  2. Top sandwiches with remaining pita halves. Place sandwiches on panini grill. Close lid and cook for 5 minutes or until cheese is melted and bread is well toasted.
