Preparation instruction

Oven: You will need: 1/4 cup (60 mL) unsalted butter or margarine at room temperature, 1 package (400 g) cookie mix, 2 whole eggs 1. Preheat oven to 175°C (350°F). 2. Cream butter for 1 minute in a large bowl on low speed of an electric mixer. Add cookie mix and eggs and continue mixing for 1 minute on low speed. Scrape down edges of bowl. If adding extra ingredients, blend in with spoon. 3. Drop dough by rounded teaspoons onto parchment paper-lined baking sheets about 4 cm (1.5 ") apart. Bake in centre of oven for 13 to 15 minutes or until browned around the edges. Cool on wire racks. Makes approximately 22 to 24 cookies. Since ovens vary in temperature, these are guidelines only. This cookie mix is great on its own or as a base with your own blend of gluten-free ingredients. The options are endless, from milk chocolate chips, to semi-sweet or dark or even white chocolate chips. Butterscotch or peanut butter chips, dried coconut, trail mix, nuts, seeds, dried fruit, even oatmeal, corn flakes or crisp rice. The rule of thumb is about ¾ cup (175 mL) total extra gluten-free ingredients per batch of cookies.
